We are all doing our bit for the environment & cutting meat out of our diet makes a huge impact. So we bring you Meat Free Mid Week Recipes – Homemade Hummus
- 2 15-oz cans of garbanzo beans; drained
- 4 garlic cloves, minced
- 2/3 cup of tahini
- 1/3 cup lemon juice (or lime juice)
- 1/4 cup olive oil
- 2 tsp minced ginger
- 1 tsp salt
- 1/2 tsp onion powder
- 1/2 tsp nutmeg
- 1/4 tsp cumin
- 1/4 tsp cayenne pepper
combine all ingredients in a food processor and pulse until smooth (if you don’t have a food processor, you can use a hand held mixer for a chunkier consistence). adjust seasonings to taste and spoon into a serving bowl. serve with veggies, pita bread or crackers. makes about 3 cups.
This recipe is delicious. I am using more hummus to make up for the lack of avocados at the moment (I am paying aruond $3.00 per avocado) so this is a great spread on my sandwiches and I even put it in baked potatos!
