I am posting this in the interests of ‘waste not want not’ as my orchids do NOT need any more ripe bananas and I am sick of banana cake.
Did you think that the only things you could do with all those over ripe bananas left uneaten in your fruit bowl were to hip up muffins or banana nut bread?
Here’s something a lot better: Vodka-based Banana liqueur!
- 1 cup sugar
- ½ cup water
- 6 -7 ripe bananas (around 4 cups). Mash them into a glass bowl.
- 2 cups Bacardi
- 2 cups Vodka
- 1 tablespoon ascorbic acid (powdered vitamin c from the chemist)
- 3 teaspoons vanilla or 2 vanilla beans scraped and immersed in the liquid prior to the straining stage.
Make a syrup of 1 cup of sugar and ½ cup water – dissolve the sugar, bring it to a boil and cook for 3 minutes then cool till very cold. Put this aside.
Combine remaining ingredients in with the bananas and cover tightly. Shake the mixture well every day without opening it.
Strain the banana mix through a very fine sieve lined with muslin as though you are making jelly. IE: Don’t poke or prod it. This would take overnight to extract the maximum liquid. Then re-strain through a coffee filter paper and do this until the mixture is clear (again, could take overnight.) Do it in the fridge. At the end of the straining process, add the syrup and a little more ascorbic acid (2 teaspoons) which will preserve the colour and then leave it in a clean glass jug for 6 – 8 weeks to age in a cool spot (could be the fridge or a cool room). Decant into pretty bottles for a great Christmas gift. Nice on icecream or after a meal as a liqueur – mmmm.
Note: you can buy LOTS of those pretty little glass liqueur glasses at op shops for almost nothing but they would make a lovely gift basket with a little bottle of this drink. Try the local markets too! Very 1950s!
